Do you ever crave for sweetness but just can’t cook? That’s me. Here are some recipes to try…


 I know you’re also wondering why you can’t just go to a grocery store and buy something? Well, first off, groceries from a store were made days ago, making the taste completely different. Second, baking can be fun, especially if you do it with or for someone, it is a good way to spend time together! 




Personally I don’t like them too much, but I know a lot of people do so here is how to make them… 


You’ll need: 


  1. 1 and 1/3 cup (165 grams) all-purpose flour 
  2. ½ teaspoon of salt
  3. 1/2 cup (115 grams) unsalted butter, softened
  4. 1 cup (200 grams) granulated sugar
  5. 2 Large eggs 
  6. 2 teaspoons vanilla extract
  7. 1/2 cup (120 grams) full fat sour cream
  8. 1 cup (230 grams) unsalted butter, softened
  9. 3 cups (360 grams) confectioner’s sugar
  10. 2 teaspoons vanilla extract
  11. 2 tablespoons (30ml) heavy cream


Start off by… 

    • Preheating oven to 350F. Line a 12-count muffin pan with cupcake liners. Line a second muffin pan with 2 liners (this recipe will make 14 cupcakes). Set aside.
    • In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using a hand-held mixer), beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Add in the sour cream and mix until fully combined.
    • Slowly add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter.
    • Scoop the batter into the cupcake liners, filling them a little over half way full. You should end up with exactly 14 cupcakes.
    • Bake in separate batches at 350F for 18-22 minutes or until a wooden toothpick inserted into the center of the cupcake comes out clean.
    • Remove from the oven and allow to cool for a couple of minutes. Remove all of the cupcakes from the pan and transfer to a wire rack to cool completely.


  • To make the frosting


  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using a hand-held mixer) beat the butter on medium speed until smooth.
  • Add in the confectioner’s sugar and vanilla and mix on low until well combined. Slowly add in the heavy cream, increase the speed to medium-high, and mix for a few more minutes until the frosting is smooth and well combined.
  • Frost the cooled cupcakes as desired.


There you go, cupcakes!!  


Cajetas (sweet treats) 

Cajetas are something I make all the time. Since I’m from Costa Rica, cajetas are a delicious sweet treat commonly made there. The best thing about it is it’s so easy to make and gives you a taste you’ll want to taste over and over again. In fact, it takes about 10 minutes at the most to make. 


The only ingredients you’ll need are: 


  • Powdered milk 
  • Condensed milk
  • Sprinkles if wanted 


How to make them: 

  1. Add a cup of powdered milk into a bowl 
  2. Add about ½ a cup of condensed milk, so for every amount of powdered milk add half as much condensed milk
  3. Mix until dense
  4. Add sprinkles if wanted and preferably, for presentation matter, make shape them int0 a figure 
  5. Done! As simple as that… 




How to make brownies   

You’ll need: 

  • Unsalted butter 
  • Granulated sugar 
  • Salt 
  • Eggs – 3 
  • Vanilla 
  • Unbleached all-purpose flour 
  • Unsweetened cocoa powder 
  • Chocolate chips 


How to Make Brownies

  • Preheat oven to 300 degrees.
  • Prepare baking dish: spray and 8 by 8-inch baking dish with non-stick cooking spray, set aside.
  • Melt butter: place butter in a large microwave safe bowl. Heat in microwave until just melted.
  • Mix in sweetener and salt: Stir in sugar and salt, let cool slightly if warm.
  • Mix in wet ingredients: add in eggs and vanilla. Break yolks and stir with wooden spoon just until blended.
  • Mix in dry ingredients: add in flour, cocoa powder and chocolate chips. Fold and stir mixture with wooden spoon just until combined.
  • Add batter to pan: pour into prepared baking dish. Spread into an even layer. Bake in preheated oven just until barely set, about 40 – 46 minutes (toothpick may have a bit of sticky batter, careful not to over-bake).
  • Cool before cutting (if you can wait!): let cool completely on a wire rack then cut into individual squares. Store in an airtight container at room temperature.
